Chicken Shawarma (شاورما الدجاج)

Lebanese-style chicken marinated in warm spices, roasted until crisp at the edges, and wrapped in pita with garlic toum and pickles.

  1. Whisk yogurt, olive oil, lemon juice, garlic, and all spices into a marinade.
  2. Coat chicken and marinate at least 2 hours, preferably overnight.
  3. Heat a grill pan or oven to 220°C.
  4. Sear chicken 4-5 minutes per side until deeply charred and cooked through.
  5. Rest 5 minutes, then slice thinly against the grain.
  6. Warm pita. Smear with toum, layer chicken, pickles, tomato, and lettuce.
  7. Wrap tight and serve with extra toum and hot sauce.
