Chilli Tofu
Crisp tofu cubes tossed with peppers, onion, garlic, soy, and chilli in a glossy Indo-Chinese sauce.

Ingredients
- 400g firm tofu, pressed and cubed
- 3 tbsp cornflour
- 1 onion, cubed
- 1 green capsicum, cubed
- 4 garlic cloves, chopped
- 1 tbsp ginger, chopped
- 2 green chillies, slit
- 2 tbsp soy sauce
- 1 tbsp chilli sauce
- 1 tbsp vinegar
- 1 tsp sugar
- 2 spring onions, sliced
- 3 tbsp neutral oil
- Salt and black pepper
Steps
- Coat dry tofu cubes lightly in cornflour, then shallow-fry in a hot wide pan until crisp and golden; lift out.
- Add garlic, ginger, chillies, onion, and capsicum to the same pan. Stir-fry on high heat until the edges char but the vegetables stay crisp.
- Add soy, chilli sauce, vinegar, sugar, pepper, and a small splash of water. Toss in tofu just long enough to coat, then finish with spring onion.
