Cuisine: Kerala (Kerala) · Style: Dry · Protein: Fish · Total time: · Difficulty: medium · Servings: 4 · Spice: 3/5
Ingredients
- 4 firm fish fillets or small whole fish, cleaned
- 2 banana leaves, cut into wrapping pieces
- 2 onions, thinly sliced
- 2 tomatoes, chopped
- 1 tbsp ginger-garlic paste
- 2 tsp Kashmiri chilli powder
- 1 tsp coriander powder
- 1/2 tsp turmeric
- 2 sprigs curry leaves
- 1 tbsp lemon juice
- 2 tbsp coconut oil
- Salt to taste
Steps
- Rub fish with lemon, turmeric, chilli powder, and salt. Let it stand while you soften banana leaves briefly over a low flame so they fold without tearing.
- Cook onion, curry leaves, ginger-garlic paste, tomato, coriander, and remaining spices in coconut oil until the masala is thick. Pan-sear the fish lightly on both sides.
- Spoon masala onto each leaf, place fish on top, cover with more masala, and fold into parcels. Pan-roast covered over low heat for 5 to 6 minutes per side until the fish flakes easily.
