Mushroom Do Pyaza
Mushrooms cooked with onions added in two forms for a sweet, savoury North Indian dry curry that is ready on a weeknight.

Ingredients
- 500g button mushrooms, quartered
- 2 onions, one finely chopped and one cut into petals
- 2 tomatoes, chopped
- 1 capsicum, cut into squares
- 1 tsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1/2 tsp turmeric
- 1/2 tsp garam masala
- 2 tbsp oil
- Coriander leaves and salt
Steps
- Sauté onion petals and capsicum in hot oil until lightly charred, then remove them so they keep their shape.
- In the same pan, crackle cumin and cook chopped onion with ginger-garlic paste. Add tomato, turmeric, coriander, cumin powder, and salt; cook until the masala thickens.
- Add mushrooms and cook uncovered until their moisture evaporates. Fold in the reserved onion and capsicum, finish with garam masala and coriander, and serve with roti or rice.
